Fettuccine Alfredo
I like to think of fettuccine Alfredo as the broke-girl’s boujee Italian dish. The sauce is based solely on heavy cream and parmesan, and the add-ins are very affordable (especially if you keep it vegetarian). Your cardiologist might experience heart flutters at the sight of the fat content in heavy cream, but I keep things a little lower in fat by cutting the recipe with half & half. The end result is a creamy sauce that still coats the noodles without sacrificing any flavor.

Baking Icelandic & Finnish Breads
Cooking may not be a resolution for someone in the new year, but these recipes are sure to get friends interested in Nordic culture and cuisine. In Iceland, barkers bury pots of rúgbrauð on top of geothermal pools full of water and return the next day to take out the bread and serve it with smoked cheese and fish.

Chickpea and Cashew Coconut Curry
Curry is one of the ultimate comfort foods in the world and it's not hard to see why. Its one of the most diverse dishes around because it can be customised and recreated in many different ways. 9 out of 10 times it’s a tikka masala for me because I’m a wimp with spice, but there are SO many different ones out there it's insane!

Mini Oat Bakes and Mango Cashew Breakfast Bowl
Oats are an insanely popular base for a lot of people’s breakfast around the world each and every day. Their slow release energy and high fibre content keep us fuelled and filled for longer, preventing unhealthy snacking and binging throughout the day. So it’s no wonder they are so popular!

Vegetarian Wrap Base Pizza
Pizza has got to be up there with being one of my all-time favourite foods, but the kcal it has…not so much. Wrap base pizzas have quickly become a superstar for all pizza lovers who are trying to watch their weight or lose weight and it's not hard to see why. The super thin base removes a TONNE of calories and makes extra room for the toppings!

Mexican Fiesta Bowl
Vegetarian Mexican fiesta bowl. Mexican food is one of my favourite types of food to eat. It’s always packed with flavour and is exciting and different! It’s also one of the simplest to cook and can be one of the healthiest if it is prepared and cooked right.

Therapies of Baking
Baking has always been somewhat therapeutic for me. Something about punching a perfectly risen bread dough or putting all your stress into whipping perfectly fluffy egg whites. Not to mention the prices at spas! My hair would be grey before I turned 25! Baking has been the cheaper and more economically friendly option. And not to mention, everyone somehow benefits from baking.
