Egg & Hashbrown Casserole
On Sunday, there was a very intense discussion that I was having with my boyfriend: what we should make to take to work in our lunches all week. After weeks of eating the same meal for lunch every day, he was getting bored with his usual go-to choice and wanted something a bit different. We both usually like to make something big so it lasts all week and doesn’t leave us without a lunch. After much debate over the merits of a variety of foods, I had an epiphany: a casserole. Only, what kind of casserole? I didn't want to make the same old casserole. I wanted something new. Something exciting. Something that didn't take all day to make. I spent a lot of the day researching different types of casseroles. Frankly, they all looked delicious.

Best Way to Kick a Cold
OK, so I am not a winter person. Go figure, since I live in northeast PA, but it is what it is. I am also not a big fan of being cold, so when I do get cold, I instantly look for something hot to help warm me up. Usually this is either coffee or tea. I am trying not to drink a lot of coffee, mainly because I drink WAY too much of it as is, and as much as I love tea, I am usually not in the mood for it unless I am sick. So I turned to the web to see what I could find as an alternative. I was looking for something that was hot, sweet, and just plain good for you. That is when I found this recipe online for a warm, soothing winter drink. I jumped at the opportunity to try it. It is called "Winter Sore Throat 'Tea'," but I guarantee it will be a favorite all year long. This simple yet delicious drink is great not only if you are not feeling well, but it is PERFECT if you just want something hot to drink without all the excess of caffeine.

I knew simple things like eggs, French toast, spaghetti sauce from a can, and hot dogs. So, after he got tired of the same things back to back, I had to figured out how to get creative! I remember my mother-in-law making country style steak when I would go over there after church on Sundays. She gave me a simple run down of it. I thought, "Okay, that’s easy enough," but then I realized it was more than just searing a piece of steak. I had never made gravy; I didn’t have any idea how to make the gravy. All that I knew was milk and flour; that’s all I could think.
