Make Beautiful Japanese Ramen in 10 Minutes
Ramen, the iconic Japanese noodle soup (but so much more than just a bowl of soup), is one of those foods that inspire zealous devotion. Ramen always seems to give off an elevated and comforting experience. Something that satisfies us at such a deep level. We just can't get enough of the salty and addictive noodles.

There's something magical about the slow cooker. You throw some food in it, turn it on and don't have to think about it for hours. The slow cooker can make it all! Desserts, snacks, side dishes, soups, even whole meals!

Summer Sweet Tea
Summer brings fun! It brings freedom, vacation, good food, and HEAT! I live in the south and the summers here are HOT! I'm talking humid heat for all of July and August. Even though I live in the south now I grew up in the north where sweet tea is not a common beverage. When you do not grow up drinking Sweet (Iced) Tea it sometimes takes a bit to adjust your taste buds to enjoy it ...... that was always the case with me. I would drink it because it is at every cookout you go to in the south but was never a fan of it......Until I stared making it myself. And it is the best sweet tea ever! Even better then Mcdonalds....... Yep, southerners know what I am talking about. When you are from the south and you travel to a different part of the country the tea is not the same. The only saving grace you have when you get that craving is going to McDonald's. So for those of you who are having a craving or have recently moved away, I have a recipe for you that will make all of your sweet tea dreams come true.

Fish Dinners in a Snap
I was raised eating and loving all kinds of fish dinners. We usually ate fish or pizza on a Friday during Lent. This tradition was carried on when going out to eat as well. You always wanted to try some foods you don‘t usually make at home. And, of course, we have the 7 fishes on Christmas Eve. I hope to simplify some of these recipes for you so you can whip up a fish healthy dinner whenever you want.

Peas or Beans and Rice is a Comfort Food Many Equate With Heritage and Home
I'm American, of Bahamian descent, and my family loved Bahamian style pigeon peas and rice. There is a variation of this rice dish practically all over the Caribbean. That's why I emphasized the “Bahamian style”. My father was a Bahamian. My mom was American, but she learned how to cook this dish for him and I grew up eating it at least 2-3 days during the week, and for sure it was served as a part of our large Sunday dinners. Other than a bay leaf I can't recall all of the herbs and spices she used in her recipe. Honestly, I don't think she ever made it the same way twice. When I grew up and got married, my late husband who was also from the Bahamas showed me all kinds of ways to vary the recipe. He did not like to use a bay leaf and preferred dried thyme leaves. In addition, he loved sampling all kinds of peas-n-rice or beans-n-rice recipes. The pigeon peas and rice dish is just one of them and I learned how to cook all of the recipes.

My Amazing Covid Meatballs
Don't be alarmed! Covid is NOT one of the ingredients. But, with everything that's going on it seems to be harder to get certain staples we used to think of as in abundance or taken for granted like, flour, sugar, salt and even ground black pepper being as scarce as toilet paper, hand soap and hand sanitizer.
