You say chicken amok, I say Khmer-rific!. Top Story - July 2021.
When you ask anyone who has travelled to Cambodia what their favorite dish is, they will say “amok”. So what is this exotic sounding dish? Amok is a curry dish made with chicken or fish that is usually served in a bowl made from banana leaf or sometimes coconut shell. Not only the presentation is unique, but also the flavor of amok will stimulate your senses. It is just extraordinary.

207 days to go
It’s turned into a magical summer day, albeit it’s only 21 degrees Celsius (that’s about 70 Fahrenheit), but who can complain. Summer in Britain so far has been the pits. Only yesterday I turned the heater on. It was only for a short thirty minutes, but that was thirty minutes too long!

I unexpectedly survived
I had decided to put away the cares of the day and indulge myself in a leisurely stroll down a well known path. It was fall and the leaves had all but fallen, leaving the trees bare to the sight. It was a warm day with only a gentle breeze blowing.

Why Vanlife?
Hi, I'm Heather and I'm in the process of converting a van into a small remote home for myself and my two cats. But why? So, I'll start by saying that I'm not close to being finished with my van conversion. Not close at all, in fact. However, I feel there is something special about where I am in this process so I wanted to talk about that. This 'something special' I'm referring to is the awareness I have over the change in my motive to pursue vanlife. This is a feeling I need to capture and document as I know some of you may be able to relate to my 'why' and be inspired to go after your goals as well.

I've kept you all waiting over a month to hear what I've been up to. It's been a hectic month! I've been traveling more often and I've been hard at work on my Master's Dissertation. I also finished the third and final book of the Lord of the Rings trilogy. It took me three years to read the whole of it, but it was an extremely enjoyable experience.

Best reviewed Women-only tour companies in the world
According to recent studies done by several credible travel firms like Condorferries & National Geographic amongst others, one thing is clear that many more & more women are travelling solo every year. The trend of solo female travellers increasing would have probably doubled if not for the Covid-19 spread however as the vaccination drive catches up, we will see that female travel is a booming space.

A Change of Luck
It's not quite every day I decide to take a detour from my daily routine and rarely am I ever this lucky to travel by plane. Popped on the bed and putting on my favorite chucks, there's a ray of sunshine streaming in through the blinds that makes today feel just a little bit luckier. Sweet smile-checked the mirror one last time to tuck in a curly blonde locket of hair, I feel like I'm already on my way to something different.

Pubs are open! It's outdoor seating only for 6 or fewer for now, but it's a start! I finally got a chance to spend time with 5 other people from my writing course in person and eat and drink and chat together for several hours, all at the same time!

SD As Seen From Interstate 90
Mindfulness Considering that I appear to be the typical, fifty something, overweight, divorcée, one would think that I am the last person to be giving travel advice. However, it seems ever since I first obtained my drivers license and took my first road trip, I have had a passion for driving, for seeing what I can see and taking the road less traveled.
