Sulfite in Jaggery

Why must every food item have chemical preservatives?

I don't know what makes people sad,

no appreciation from others?

that's of least concern for me.

Sulfite in the expensive jaggery,

I bought to make sweets for the kids,

made me angry.

Sulfite is my nemesis.

my body can handle a lot of stress,

but it can't tolerate chemical stress,

as food preservatives.

Skin tends to itch, nostrils tingle,

windpipe tightens, brain feels foggy.

That's immune system saying:

Chemical intruder. Avoid.

To see it in

a traditional food ingredient as jaggery

made me really sad.

Most of you will not understand it,

but as a health researcher-writer,

I can't not shed light on threats of current times.

It deserves everybody's attention.

    The only food that may not have chemicals are the ones that we grow ourselves. Chemicals are so prevalent everywhere
